I have been eating 1/2 an avocado with bread, egg or as part of a smoothie for the past 7 days and will be eating it for another 21 days as part of the 28-Day Shrink Your Stomach Challenge. As such, I have quickly come to learn that avocados can be very versatile. For those who don’t know about the Dr Oz 28-Day Challenge, it’s not just about eating avocados, for lunch you can eat a fruit and fiber combo and for dinner 1/2 cup of whole grains with lean meat and unlimited non-starchy vegetables. But for breakfast – it’s avocados 🙂
Although for the 28-day challenge I have some limits on recipes I can creating using avocados, I have still found some surprising recipe like the Avocado Omelette. For those who are not on the challenge, you can spice it up and add more vegetables and eggs, but the recipe below is specifically for those on the challenge.
Ingredients, Serves 2
1 Avocado, Pitted and Diced
¼ Black Pepper
¼ Sea salt
2 tbsp of Olive Oil
Break egg into a bowl, add black pepper and sea salt. Next, mix in the diced avocado. Place the frying pan on medium heat and add two tablespoons of olive oil. Pour the mixture the mixture and fry for 3-5 minutes. As you can see from the picture, I like my omelette well done 🙂
