Say hello to one of the most colourful salads ever – this Raspberry, Mango and Kiwi Salad is the perfect combination of fruit and fiber. Well it has a bit more fruit than fiber. It’s a recipe for the 28-Day Shrink Your Stomach Challenge which I am currently on Day 6! I had lunch a few days ago but will definitely be having it again so I thought I would share for anyone struggling with ideas for lunch time.
Ingredients, Serves 4
3 kiwis, peeled and diced
1lb mango chunks or 2 large mangoes peeled and diced
15oz red cabbage, shredded
1 tablespoon olive oil
¼ of red onion (optional)
Mix all the ingredients in a bowl and serve.
